Happy Thanksgiving!



I want to wish my readers a Happy and Full Thanksgiving! Also presenting you my Sweet Potatoes Pie. Hmmm....I think this year I bought a really orange color sweet potatoes as my pie looks really orange in color.

Flaky Pie Crust



This is for Gert. I adapted this recipe from allrecipes.com. I love this basic pie crust recipe and has been using it for all my homemade pies. I even used it to bake curry and pork floss puffs. For the above chicken pot pie, I used two pie crusts.

Ingredients: (yield one 9 inch pie crust)
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup butter, cold, cubed
5-6 tablespoons ice water

Method:

1. In a food processor, add in the flour, salt and cubed cold butter. Pulse a couple of times.

2. Add in Tbsp. of cold water while pulsing at the top opening until a dough is formed.

3. Turn the dough on a plastic wrap, wrap well and refrigerate until ready to use.

Chicken Pot Pie



I made Gert's chicken pot pie the other night because I have all the ingredients at home. I omitted the potatoes because we don't really like it and added the corn kernels. I made my own pie crusts as well. With a food processor, pie crust is very easy to make. I did the lattice by hands, didn't know we get to buy the lattice pie cutter these days, can really save a lot of work.



Since I used raw chicken breasts instead of cooked and omitted the potatoes. My cooking method was slightly different. First, I had to saute the chicken until cooked with the onion, and I only used one cup of water since I didn't have to boil cook the potatoes. Lastly I thicken the sauce with some cornstarch.



A slice of the pot pie the lazy way (instead of the individual ones, Gert & I made it into one big pie)! My hubby actually liked it and had three huge pieces. Edda liked it too except the picky Evy. I think that was because she didn't like celery but she did finish the top crust and most of the filling. Gert, thanks for sharing this recipe. :o)

Apple Crumble Pie



Frankly we were not an Apple Pie fan. Not even the Bakery's apple pie can convinced us otherwise. And then we were introduced to Apple crumble pie ages ago while having dinner at an American couple's house and thought that hey it was actually not bad at all. Perhaps it was the crispy top? Or the spices she used in her apple pie filling? Not sure...but her apple crumble pie just tasted great. So, I was more open-minded from then on.



I went online and came across this recipe at Allrecipes.com and decided to give it a try. I totally loved it and have been making this pie ever since. Years went by and I am glad that the recipe is still there and gaining popularity.



This time, I also added some oats, raisins and chocolate chips in my crumble topping just for some variation. Serve with a scoop of your favorite ice-cream or a dollop of whipped cream and here's a slice of your pie! Oh yeah, this pie tastes better the next day. Looking at the picture, I need to go get myself a slice again. LOL! The top stayed crispy for days, just don't cover it with anything. I keep mine uncovered in the oven.

Sweet Potato Pie


I finally made my sweet potato pie today, ahem... 4 days after Thanksgiving. LOL! Why? Because I already bought the sweet potato and every time I opened the refrigerator, it has been screaming at me to bake it. Oh well, it is the season for pie so let's have some pies before I have no mood to bake pie anymore. Therefore, I will have another one of my favorite pies coming up. But have to wait until we finish this pie first, got to do it one at a time.


I made everything from scratch, even the crust. Home made crust is so much better than the frozen pie crust, so even as lazy as I am, I just have to make my own pie crust. I guess a bonus now is I own a food processor, so it's way easier to make the crust, just let the food processor does its' job. While the pie dough resting in the refrigerator, I will prepare the sweet potato pie filling.


This is my favorite recipe that I have been using for years. It has never failed me and I totally loved it. I got the recipe from Allrecipe.com so click here for the recipe. Oh, I added 1 Tbsp. of cornstarch into the filling to thicken it more. Serve with whipped cream on the side. Little Edda totally loved it and always requested two pieces for herself!
